Another interesting application : cooking mussels

Infrared radiation proves to be very effective when it comes to cooking mussels.

Using focused radiation, one can achieve fast 'pop up' rates, maintain favourable yields and come up with a very tasty and attractive mussel.

For this particular test, we used 'JUMBO' mussels of Zeeland (NL) origin.

Weight before cooking : approx. 22-24gr.

By using hig power (zone 1 : 100%, zone 2 : 95%, zone 3 : 90%), a pop rate of 22 sec. was achieved.

Weight after cooking : approx. 20-22gr.
